The first time I made these Monster Cookies I literally could not believe how delicious they were. I remember bringing a batch to a friend and receiving a text afterward that involved a lot of exclamation points. It went something like: OHHH MYYY GOOODNESSS, THESE ARE THE BEST COOKIES I’VE EVER EATEN!!!!!!!

And I have to agree with her. They really are that good. And they don’t contain flour, which is kind of amazing. I always load them up with chocolate candies, raisins and chocolate chips. If you use enough peanut butter, they will stick together just fine.

I should also point out that the word “monster” is included in the title for a reason. These cookies are HUGE. They’re a great gift for loved ones and also great just to have hanging out in the kitchen.

HOW TO MAKE MONSTER COOKIES

STEP 1

Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside.

In a large bowl, mix together the butter and sugars until creamy. Add the eggs, peanut butter and vanilla and mix well. Stir in the baking soda and oats. Stir in the chocolate chips, M&M candies and raisins. Mix well.

STEP 2

Using a 1/4 cup measuring cup, drop batter onto prepared baking sheet. Slightly flatten each round of batter with your fingers, creating a circle with approximately a 3-inch diameter. Top with extra M&Ms, if desired.

STEP 3

Bake in the preheated oven for 12-16 minutes, or until edges are golden brown and centers are no longer doughy. Let cool and store in an air-tight container

RECIPE NOTES

  • Use a spoon to gently remove the batter from the 1/4 cup measuring cup. Smooth into a round shape using your fingers.
  • Feel free to replace the chocolate chips, raisins and M&M’s with other “filler” ingredients such as coconut flakes, dried cherries or other chocolate chip varieties. Be sure not to exceed 3 total cups of extras!
  • These cookies are gluten-free, just make sure you check the packaging on the oatmeal you use to ensure this.
  • These cookies are the perfect holiday gift! Wrap in plastic wrap and tie up with a seasonal bow.

WHY DO SOME RECIPES CALL FOR EGGS TO BE USED AT ROOM TEMPERATURE

Allowing your eggs to come to room temperature is important for a couple of reasons. One, they will mix better with your batter, and then let the cake mix raise better as it bakes. Also, the cake will take a little longer to bake if room temperature eggs are used but creates a perfect cake that has a great texture.

If a cake has a high fat content, adding cold eggs could affect re-hardening the fat. Finally, eggs that are needed to be created into a foam for a recipe will have better volume if warmed to room temperature.

SALTED BUTTER VS UNSALTED BUTTER

Ahh, the great baking debate. Many bakers use unsalted butter in their baked goods in order to avoid over-salting. I, however, believe that there is no such thing as “over-salting.”

I always use salted butter in my baked goods (and for everything else under the sun) because it gives everything I make an extra touch of salty deliciousness. If you go the unsalted route, keep in mind that you may need to add a bit extra salt to the recipe!
